Kimchi
One of the food i learn when i child, teach by my maid. The recipe are listed below.
Ingredient :

Garlic

Cabbage

Chili powder

Vinegar
| 2 large sized
| 1 large size
| 4 small pieces
| 8 pieces
| 300 gram
| 60 ml
This ingredient allow you prepare 350g - 500g kimchi, you can play around vegetable you like ( pickles, cucumber, potato). But you need slices it in big shape, so through the fermentation process will not melt.
Once you slices all the ingredient into big slices, you will mix all the ingredient in a bowl ( glass / stainless steel ). Remember wear glove cause the acidic. After mix well put in glass container, do not put in plastic, steel, rubber.
If you easily forget thing, put the container into refrigerator, let the vege ferment slowly, if you want quicker, just put at room temperature several day, then put in refrigerator. Mostly you need 2 - 4 weeks, for the ferment.
When put into glass container, maybe the water just only low level, but through the ferment process will become more, so just trust the process.
If you want more pedas ( spicy ), just play around with the chili powder or add chili slices.
If you want more acidic, just play around with the vinegar.
If too acidic, just play around with the sugar.
